5 lbs gone!

So I stepped on the scale today and whooosh! im down 5 lbs, I'm extremely happy. Today I made that pizza I spoke of on my previous post and it was DELISH. I had to count carbs like five times to make sure I wasn't falling off plan, but HOW? The crust is made out of cauliflower, the sauce out of tomatoes and then the toppings were cheese,mushrooms,onions,bell peppers and beef!Only 7g carbs per slice(big slice). that was heavenly, and i have never been a big pizza eater either, it's not something I miss, I haven't had pizza in months. This was something I was completely happy to feed Sairah. She gobbled it up. the sauce was so simple to make as well. I'm really beginning to enjoy making new recipes, especially when I see my family enjoy them so much. Sairah had some spinach fritata and half a GF pancake for breakfast, then she had a kefir mango smoothie(with her CLO in it). Later on she had some beef stew with cauli-rice, and for dinner is when she had the pizza, and this is all ontop of all the breast feeding she does. Alhamdullilah! Her appetite sure has grown! I'm so glad to see her eat so well, She had been slacking in the food department for a whole month.

Speaking of Sairah, she is walking sideways now, she takes about 6-10 steps, but sideways, it's so funny to watch. Speaking of watch, I need to take a video of her doing this before she starts running lol.

I don't have any pictures of the pizza I made, i was just too hungry by the time it came out I pounced on it lol. I apologize for the short, uninteresting entry, i'm just trying to get inthe habit of posting every day, as you can see I missed yesterday. We went out to the park and spent all evening hanging out, It was nice. I'll post my recipes up tomorrow. I'm mainly doing the recipe postings so I can remember what I have eaten, and also for future references.

Induction day 3

So today has been a busy day for me in the kitchen. I spent nearly all day in there and now I am behind in my housework! Gha! ya just can't win! I had to prepare several vegetables. I had to wash my Romaine lettuce, dry it then chop it up so it would be ready for salads. I had to wash, boil and rice my 4 cauliflower heads. I had to wash, scrub and set my pickling cukes to lactoferment, which should be ready in 4 days to a week, can't wait! I managed to skip lunch again, i was just so busy! between Sairah wanting to nurse often, throwing tantrums and all because she is teething, and taking care for Dh and the pets and blaaaaaaah blah blah, it took me 5 hours in the kitchen to get all that prepared then get dinner started and then serve it. Needless to say Im EXAUSTED. In fact, I'm going to make myself some green tea with lemon grass and spearmint.

So the cravings have not been many, actually none lol. I'm just very hungry during the day and that's because I don't have anything on hand, that is why I spent all day today preparing stuff. Now all I have left to do is shred the leftover chicken so I can use it in salads and breakfast tomorrow :) The GF pancakes for Dh and Sairah are already done, since we had some left over today.

For breakfast today I had a Confetti Quiche with a side of home made breakfast sausage. The recipe for t he quiche is as follows:


6 eggs
4 oz cream cheese
1/2 cup asparagus chopped
1/2 cup of green onions chopped
1 med roma tomato seeded and diced
1/2 cup of shredded mozzarella cheese

Pre-heat oven to 350 degrees. Let cream cheese sit at room temperature to soften(or method of your choice) then beat eggs and cream cheese until there are small chunks of cream cheese. take the chopped vegetables and whisk them in. Add salt to taste. Pour mixture in a greased pie mold/pan. Sprinkle Mozzarella on top (you can add more if you wish) and bake for 35-40 minutes. Devide in 4 eaqual parts. Each serving is 4.0 g of Carbs. Enjoy!


For Lunch I had the breakfast left overs in a rush. For dinner I had baked Chicken over some cauli-rice. It was DELISH! The cauliflower was so much like rice! For the baked chicken, I just stuffed half an onion, once celery stalk and 2 cloves of garlic in the cavity, rough chopped. I melted some butter and put my favorite spices in it, took a syringe (it was a medicine dispenser lol) and put butter under the skin in different places of the chicken. I seasoned the skin with garlic, salt and butter and I placed it in the oven at 325 degrees for 3 hours.






To prepare the cauli-rice, you simply boil your washed cauliflower until it's tender. Let it cool and then shred it in your food processor or by hand with a grater. If you want more flavor you can take the already shredded cauliflower and sate it in some butter (yeah yeah I sound like Paula Deen LOL) ad a pinch of salt and whatever seasoning you like. You can use this with stir fry's, you can even make mock hash browns! Yum! Each half cup of Caulifower is 2.5g of carbs. This is also a great way to get veggies into your kids! My DD loved the Quiche and she had some of this cauli-rice as well.

Since you have the cauli-rice done already, here is a couple of ideas for it. You can make it into Pizza crust or "bread"sticks. They are just wonderful! I got the recipe from This Blog.
I plan on making this pizza tomorrow, we'll see how it turns out!

Induction

Well here i am again, 2 months later trying to update my blog. I just don't like how it looks, but I guess for now it will have to do. Sairah's first birthday was on Monday, I cannot believe a whole year has passed by. I felt so emotional that day, partially because the time just flew, it was so much of a blur for me. We dealt with SO much, she had GERD for four months and we didn't know it, by the time it started to get better she was 7 months old. Then we were left with the crappy sleeping issues due to the GERD. We are still struggling with sleep, but it's not as hard. I love her more and more every day, she is becoming such a little person! She is most definitely going to be a handful, but I'm glad she is a happy child. I don't think I have many pictures of her not smiling. She is such a joy and is always happy. Yes, she is whiny, but I have yet to meet a baby this age who isn't constantly nagging. I hope to keep track of her second year of life as I did not have much time or energy to do so her first year.

I have slowly been weaning off of carbs since January. The first step I took was to increase my fat intake, i hopped on the coconut oil bandwagon and I won't be looking back. I feel better than ever, now I'm just focusing on losing the weight that I gained due to processed foods and carbs. I decided to also cut off all grains and gluten for the time being. I have insulin resistance and I KNOW that is the cause, I would hate to develop diabetes or something of the like if it can easily be prevented. So, as I was saying, i increased my fat intake and that alone really helped me let go of breads and most carbs. I found myself eating maybe a slice of bread in the morning and thats about it for grains.I am very satisfied and don't get very hungry even though I still Nurse Sairah almost all day. So after much reading and research I decided it's time to just drop the weight. I feel fully prepared and I have done this slow enough to where I won't behaving any "withdrawals" of any kind. I know how to keep my body satisfied and in good health so now it's time to take the biggest test! I am on day 3 of the Atkins induction and am already 3 lbs down! (Keep in mind I haven't been eating breads or gluten for almost a month). now before you GASP at the thought of "atkins" I want to clarify that I tweaked this way of eating to my personal standards. I agree with almost everything Dr. Atkins talk about, butI will not be eating any processed foods, mixes, splenda, vegetable oils or junk ;)

anyhow it's time for bed now So I will hopefully cath up tomorrow and start tracking my menu's and such!
